Why You’ll Love It
-
Simple ingredients: Butternut squash, butter, brown sugar, salt, and pepper are all you need.
-
Easy to prepare: Boil the squash until tender, then mash everything together.
-
A little sweet: Brown sugar brings out the squash’s natural sweetness without overpowering it.
Ingredients
-
4 pounds butternut squash
-
3 tablespoons butter
-
3 tablespoons brown sugar
-
Salt and pepper, to taste
Instructions
-
Peel the butternut squash, cut it in half, and scoop out the seeds. Cut the squash into cubes.
-
Place the squash in a large pot and cover with water. Bring to a boil, then cook until the squash is very tender when pierced with a fork, about 15–20 minutes.
-
Drain the squash well and return it to the pot.
-
Add the butter and brown sugar. Mash until smooth, then season with salt and pepper to taste.
-
Serve warm.
Recipe Notes
Drain the squash thoroughly before mashing so the finished dish isn’t watery. Taste before serving and adjust the salt, pepper, or brown sugar to your liking.
