If you’re anything like us, you’re always looking for delicious ways to use up extra sourdough discard. These sourdough discard brownies have become a favorite in our house — rich, fudgy, chocolatey, and incredibly simple to make. The sourdough discard adds a subtle depth of flavor while helping create that soft, chewy texture that makes homemade brownies so hard to resist.

As always, we use organic flour and organic cane sugar in our kitchen. After making the switch away from enriched flour, we noticed a huge difference for our family, and we love being able to make homemade treats with simple ingredients we feel good about serving.

These brownies come together quickly in one bowl and bake beautifully in a 9x13 pan, making them perfect for family movie nights, potlucks, or just using up that sourdough discard sitting in the fridge.

Sourdough Discard Brownies

Ingredients

  • 160g sourdough discard
  • 2/3 cup butter, melted
  • 1 cup organic cane sugar
  • 1/2 cup brown sugar
  • 3 eggs
  • 1 tablespoon vanilla extract

Dry Ingredients

  • 1 cup organic flour
  • 3/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 9x13 baking pan. We use avocado oil spray.
  3. In a large bowl, mix together the sourdough discard, melted butter, organic cane sugar, brown sugar, eggs, and vanilla extract until smooth.
  4. Add the flour, cocoa powder, and salt. Stir until fully combined.
  5. Fold in the chocolate chips.
  6. Spread the thick batter evenly into the prepared pan.
  7. Bake for 25–30 minutes, or until the center is set and a toothpick comes out with a few moist crumbs.
  8. Let cool slightly before slicing and serving.

Tips

  • For extra fudgy brownies, decrease flour to 3/4 cup
  • These are delicious warm with a scoop of vanilla ice cream.
  • You can easily add chopped walnuts or pecans for extra texture.
  • The flavor gets even better the next day as the sourdough notes deepen slightly.
