Pumpkin Muffins
Soft, warmly spiced, and full of pumpkin flavor, these pumpkin muffins are the kind of simple fall recipe that makes the whole kitchen smell good. They come together quickly in one bowl and are perfect for breakfast, an afternoon snack, or something cozy to serve with coffee on a cool morning.
Ingredients
- 1 cup coconut oil, melted
- 4 eggs
- ⅔ cup water
- 3 tablespoons butter, melted
- 1 (15 oz) can pumpkin puree
- 3 ½ cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons pumpkin pie spice
- 1 ½ teaspoons salt
- 1 ½ cups granulated sugar
- 1 ½ cups brown sugar
Instructions
- Preheat oven to 350°F. Line muffin tins with paper liners or lightly grease them.
- In a large mixing bowl, combine the melted coconut oil, eggs, water, melted butter, and pumpkin puree. Mix until smooth and well combined.
- Add the flour, baking soda, pumpkin pie spice, salt, granulated sugar, and brown sugar.
- Stir until everything is just combined. Try not to overmix the batter.
- Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
- Bake at 350°F for 20–25 minutes, or until the tops spring back lightly when touched and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
- Allow the muffins to cool in the pan for several minutes before transferring them to a cooling rack.
A Few Tips
The coconut oil gives these muffins a wonderfully soft texture, while the small amount of melted butter adds a little extra richness. Be sure your coconut oil and butter are melted but not extremely hot when you mix them with the eggs.
If your kitchen is cool, the coconut oil can begin to solidify when it touches cold ingredients. Room-temperature eggs and pumpkin can help everything mix together more smoothly.
These are especially good served slightly warm with butter — and, naturally, a cup of coffee.
Storage
Store the muffins in an airtight container at room temperature for about 2–3 days, or refrigerate them for longer storage. They can also be frozen and thawed individually when you want one.
